Bruschetta

My garden is growing well.   It’s not all pretty or terribly organized or free of weeds, but it is growing.  Lacinato kale, basil, and green beans have been reliable producers (and have been oh so delicious this year).  I have an out-of-control spaghetti squash plant that has affixed itself to my air conditioning unit.  There are the beginnings of several watermelon (which seem really late to me).  And, finally, my tomato plants.  Well, they are out of control.  The tomato bed looks like an untamed jungle.  There are plenty of green tomatoes waiting to ripen and once they do (likely all at the same time), I will be inundated with these delicious gems.

Gluten Free Beef and Vegetable Slow Cooker Lasagna

I don’t own many fancy kitchen gadgets or appliances.  I love my Vitamix and Kitchenaid Mixer and use one or both daily.  But then there’s my slow cooker; it rarely gets any love.  I’m not sure why.  On occasion I will allow a corned beef brisket the time slowly cook all day or whip up a beef stew for the crock pot.  Otherwise, the slow cooker sits in my closet, way back on a shelf, out of sight and out of mind.

This week I dusted off my crock pot lid (literally, there was dust on it) and decided to make a recipe that we all love:  lasagna.

Gluten Free & Egg Free Brownies (Using Aquafaba)

A few months ago I stumbled upon a recipe using aquafaba as an egg replacement.  I was intrigued as to what aquafaba actually was.  With a little investigation I discovered that aquafaba refers to the water found in a can of garbanzo beans.

My intrigue quickly turned to nausea.

I tucked the idea of using aquafaba far away…until this week.

Gluten Free Soft Baked Chocolate Chip Cookies

I’ve been a mom for nearly seventeen years.  And in those seventeen years, I have tried to remind myself that my job is to bring up boys who will be more and more independent of me as they approach manhood.  It’s a bittersweet thing for a mamma.

In this process, something terrible has happened.  Somewhere along the line my son has learned how to make his own cookies.  I mean, really, this is a kick to the gut!
