Lunchbox season is upon us. After school snack time is here. I find that the better prepared I am to handle the snack cravings of my kids, the better they eat and the less likely they are to grab junk.
Soft, gluten free chocolate donut holes, munchkins, are filled with a healthy hit of avocado, baked to perfection, and tossed in powdered sugar. Do gluten free munchkins exist?
Yes. Yes they do.
I remember when I first transitioned my family to gluten free eating. One of the hardest items to replace was breadcrumbs. I used breadcrumbs with great regularity. I tested many commercial brands but none were to my liking. I finally resorted to making my own by crushing a box of unsweetened gluten free rice cereal. This worked well but was still missing something.
Cauliflower is my favorite vegetable. There’s simply no contest. I am amazed at its versatility. It is so much more than just a bunch of boiled white florets. Cauliflower puree is nothing short of luxurious and is the perfect bed for a perfectly grilled steak. Roasted cauliflower tossed in parmesan cheese and herbs is a snack-able treat. Pureed cauliflower serves as a perfect and healthy base to any cream soup. Pizza crust. Breadsticks. Cauliflower rice. The possibilities are endless.
