Gluten Free Lemon Cheesecake Crumb Bars

Despite the fact that I enjoy making desserts, I am really not a big dessert eater.  I do enjoy cookies – classic cookies – but nothing fancy.   I can pass on cake, pastries, and pies.  But there is one dessert item that renders me completely helpless:  cheesecake bars.  It’s kind of ironic because one of my least favorite desserts is cheesecake.  Go figure!

Gluten Free Irish Soda Bread Scones

I am one of many whose ancestry is a fiery mix of Italian and Irish.  While I am heavy on the Italian side and light on the Irish, I do yield to my Irish side once per year.  It’s right around this time that I succumb to the traditional Irish fare of corned beef (minus the cabbage), carrots, potatoes, and soda bread.

Gluten Free Pizza Stick Dunkers

I go food shopping once every two weeks.  It’s a plan that has helped our family stay within our budget.  But as we near day 12, 13, or 14, we find that our supply of food dwindles rapidly.  We are often at bare bones, and sometimes, I need to get creative with meals to use up what we have on hand.  My kids often joke that those throw-together-whatever-is-in-the-fridge meals are often the best.

Gluten Free Italian Breadcrumbs

I remember when I first transitioned my family to gluten free eating.  One of the hardest items to replace was breadcrumbs.  I used breadcrumbs with great regularity.  I tested many commercial brands but none were to my liking.  I finally resorted to making my own by crushing a box of unsweetened gluten free rice cereal.  This worked well but was still missing something.
