Looking for a super simple Mother’s Day breakfast idea that’s both delicious and easy to make? Toast up some sourdough bread and top it with a slightly sweet lemon cream and berries.
What Should I Make for Mother’s Day Breakfast?
Finding a simple Mother’s Day breakfast recipe can be challenging. You want mom to have something special, but you want it to be easy enough for kids or a not-so-kitchen-savvy spouse to be able to make it. I’ve got you covered.
Sourdough is everywhere. My personal favorite sourdough is from Bread SRSLY. I am so excited to be a brand ambassador with them. My favorite item from their lineup is their cinnamon raisin bread. The loaf comes uncut which is great because you can cut slices into any shape and thickness that you want. The taste is also amazing. It also checks off all of the allergy friendly boxes for so many. It’s my go to bread and is always in my fridge.

I knew that I wanted to use the cinnamon raisin loaf as a base for my breakfast idea. I started by slicing the bread into 1/4″ thick slices. To get a little fancy, I trimmed the edges off (don’t toss them – store them away for a snack!). I then lightly toasted the slices. I didn’t want the bread to hard.
Next I made a really easy lemon and honey cream. I used cream cheese, honey, and lemon to whip up a delicious spread for the toast. Begin with 4 oz of cream cheese. Place it in a mixer or use a hand held mixer to whip the cream cheese until smooth. Be sure to scrap the sides and bottom of the bowl as needed. Next I added 2 tablespoons of freshly squeezed lemon juice (about one lemon) and 1 tablespoon of honey. I mixed everything together until smooth. Again, be sure to scrap down the sides. I added a dollop of the cream onto each piece of toast and topped it with a few berries. While I used blueberries, any kind of berry will pair perfectly with the lemon flavor of the cream. Arrange a few slices of toast on a plate, serve with a side of additional berries, and a beverage like coffee, tea, or juice (fresh flowers would make a pretty addition to – just saying). Here’s to the perfect breakfast for mom and the easiest recipe to create.
