Gluten Free Dairy Free Mini Chocolate Chip Muffins (PLUS a Giveaway)

Gluten free and dairy free mini chocolate chip muffins are the perfect pint sized lunchbox treat or afterschool snack for your little ones (and big ones, too).

There is something so fun about miniature sized treats!  These little minis won’t disappoint!  Whether you pair a few muffins with eggs and fruit for breakfast, pack two or three away in your child’s lunchbox, or keep some available for an after school snack, everyone will be satisfied with these lightly sweetened muffins.

A few weeks ago I reached out to the folks at Enjoy Life.  For those of us with not one, but multiple food related allergies or intolerances, the product line from Enjoy Life is a life saver.  I can not begin to tell you just how relieved I feel when I see Enjoy Life products available.  I know that everyone in my family will be able to enjoy whatever they are serving.  That is huge for me.  We have some family members with gluten issues, some with egg issues, others with sesame trouble, and still others with nut and milk troubles.  Sometimes it is simply exhausting trying to keep track!

Enjoy Life has done something pretty awesome for my readers.  They asked me what some of my favorite treats were and sent me some product to photograph.  Better yet, they offered to give an identical gift pack away to one reader of the Gluten Free Gathering.

So, here’s what is up for grabs:

  • Lentil Chips – these are amazing.  Not only do they have amazing crunch, but they taste amazing!
  • Caramel Apple Chewy Bars – soft and full of flavor, these bars are a favorite of my children (and me, too)
  • Snickerdoodle Mini Cookies – these perfectly portioned packets are ideal for lunchbox snacks.
  • Chocolate Chip Cookies – these full size cookies are so good.  Crispy goodness in every bite!
  • Semi Sweet Mini Chip Snack Packs – if you love Enjoy Life’s Mini Chips for baking, you are going to love these snack packs.  The chocolate chips you absolutely love portioned out into individual packets.

All of this can be yours.   To become eligible for a chance to win, head on over to The Gluten Free Gathering’s Facebook page.  Like and follow the page, and leave a comment on the Facebook post telling me what your favorite gluten free snack is.  Giveaway ends on Saturday, August 11, 2018 at 11:59PM (EST).  One winner will be randomly selected from all eligible entries and messaged directly on Facebook by no later than Monday, August 13, 2018.  The winner will have until Wednesday, August 15, 2018 to provide their full name and mailing address.  Enjoy Life will be sent your information and send your gift pack directly to you.

**As always, read the ingredient lists for every item that you purchase, and make purchases according to your individual health and dietary needs.  Check for cross contamination issues.  I also recommend periodically rereading the labels of your go-to’s as ingredient lists change and cross contamination could arise.  Better to be safe…**

Gluten Free Dairy Free Mini Chocolate Chip Muffins
yields 18 mini muffins

1/4 cup avocado oil
1/4 cup granulated sugar
1 egg
1/4 cup unsweetened vanilla almond milk
1 cup gluten free flour blend with xanthan gum (I used Bob’s 1 to 1)
1 teaspoon double acting baking powder
1/4 cup dairy free chocolate chips (I used Enjoy Life)

Preheat the oven to 350 degrees.

In the bowl of a stand mixer fitted with a paddle attachment, cream together the oil, sugar, and egg until smooth.  Add in the milk and continue to mix until incorporated.

Add in the flour, baking powder, and chocolate chips.  Mix until all of the ingredients form a smooth batter.

Using a miniature muffin tin, either line 18 spaces with miniature cupcake liners or spray with a nonstick cooking spray.  Using a 2 teaspoon sized spring loaded scooper, scoop out dough into the prepared muffin tin.  If you do not have a scooper, simply fill each muffin space 3/4 full with batter.

Bake for 12-14 minutes or until golden brown.  Loosen the edges of the muffins with a butter knife and transfer each muffin to a cooling rack.
