Gluten free and dairy free mini chocolate chip muffins are the perfect pint sized lunchbox treat or afterschool snack for your little ones (and big ones, too).
There is something so fun about miniature sized treats! These little minis won’t disappoint! Whether you pair a few muffins with eggs and fruit for breakfast, pack two or three away in your child’s lunchbox, or keep some available for an after school snack, everyone will be satisfied with these lightly sweetened muffins.
A few weeks ago I reached out to the folks at Enjoy Life. For those of us with not one, but multiple food related allergies or intolerances, the product line from Enjoy Life is a life saver. Gluten Free Dairy Free Mini Chocolate Chip Muffins
yields 18 mini muffins
1/4 cup avocado oil
1/4 cup granulated sugar
1/4 cup unsweetened vanilla almond milk
1 cup gluten free flour blend with xanthan gum (I used Bob’s 1 to 1)
1 teaspoon double acting baking powder
1/4 cup dairy free chocolate chips (I used Enjoy Life)
Preheat the oven to 350 degrees.
In the bowl of a stand mixer fitted with a paddle attachment, cream together the oil, sugar, and egg until smooth. Add in the milk and continue to mix until incorporated.
Add in the flour, baking powder, and chocolate chips. Mix until all of the ingredients form a smooth batter.
Using a miniature muffin tin, either line 18 spaces with miniature cupcake liners or spray with a nonstick cooking spray. Using a 2 teaspoon sized spring loaded scooper, scoop out dough into the prepared muffin tin. If you do not have a scooper, simply fill each muffin space 3/4 full with batter.
Bake for 12-14 minutes or until golden brown. Loosen the edges of the muffins with a butter knife and transfer each muffin to a cooling rack.
