Over the past several months I’ve continued to revisit a recipe that I’ve been working on. It’s a flourless, dairy free recipe that features almond butter. Finally after some tweaking here and there, I have a recipe that I truly love and want to share with you!
Who knew that a cookie free of flour could be so amazing? First off, I am amazed how light and fluffy these little cookies are. Out of the oven they are like little pillows of yumminess. Just break one open and you’ll see.
I’ve really pushed the envelope here with regards to the sugar content. With just a 1/4 cup of brown sugar and some natural sweetness from raisins, you’ll find these cookies just a bit sweet and no more. If you’re looking for a recipe that will leave your cavities aching, this is not the one for you. But if you have been searching for a healthy alternative to dessert, you’ve just hit the jackpot.
My boys are my toughest critics and my biggest fans. They’re also pretty honest. So when they tell me that they love these cookies, I know that they must be good. And they are.

Gluten Free Almond Butter Raisin Spice Cookies
yields 24 cookies
2 large eggs
1/4 cup light brown sugar
1 & 1/2 tablespoons molasses
1 cup unsweetened almond butter
3 tablespoons coconut flour
1 & 1/2 teaspoon ground ginger
2 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon ground nutmeg
1/2 teaspoon baking soda
1/2 teaspoon double acting baking powder
1/4 teaspoon sea salt
1/2 cup raisins
Preheat the oven to 350 degrees. Line a stainless steel baking sheet with parchment paper. Set aside.
In a small bowl whisk the eggs.
In the bowl of a stand mixer fitted with a paddle attachment, add in all of the ingredients (eggs as well).
Mix until the ingredients are just combined. Do not over mix.
Using a one tablespoon sized, spring loaded cookie scoop, scoop out level tablespoons of dough. Roll into a ball then gently flatten to a round in the palm of your hand. The dough will likely be sticky. If the dough begins to stick to your hands, very lightly dampen your hands. Place the cookies one inch apart.
Bake for 8 minutes. Remove from the oven. Allow to sit on the baking sheet for 5 minutes before transferring to a cooling rack.
